@Four Seasons Amman - is also very conveniently located. Although it has a more adult vibe, the service is impeccable and the rooms are unparalleled in Amman. It's a bit on the pricey side but if you're ever there in the winter, ask for their hot chocolate. The richest most deliciously decadent pot of melted chocolate with a side of biscuits and marshmallows and other dippables :)

Alqasr Metropole Hotel - 4 Star, recently refurbished, wonderful service, and great value for money. I'm not sure if the rooms are quite as spacious as you'd like but they're comfortable enough and very clean. The location isn't ideal but several of the best restaurants in Amman are located in the Alqasr Metropole (Howard Johnsons I believe).

InterContinental Jordan - One of the mainstays in Amman, its got great restaurants downstairs (apart from the Mexican @Cinqo de Mayo), a premier location and excellent service.
