Where can I buy cauliflower pizza base
inAmman, Jordan
?Tips...
I don't know of any places that have it in Amman but this recipe is from a vegan friend of mine.
1/2 head of cauliflower (about 4 cups of small florets), 2 and 1/2 tbsp flax meal/chia seeds, 1/4 cup water, 1/3 cup flour (spelt, white, oat, sorghum, or almond.), 1 tsp dried oregano, 1/4 teaspoon garlic powder, 1/2 teaspoon salt.
Whisk together flax and water, then refrigerate for 1/2 hour. Chop the cauliflower into small florets, then steam them until they fall-apart soft. Drain them fully. Stir the oat flour with the oregano, garlic, and salt. Preheat the oven to 230 C. Then once the cauliflower cools, place it in a clean dish towel/cheesecloth over a sink or bowl, and squeeze out as much moisture as possible. At least 2/3 cup water should come out.
Place the squeezed-out cauliflower into a medium bowl and add the flax mixture. Mash and stir well. Then stir in the oat mixture. Form into a ball, and place on top of the parchment-lined baking sheet. Pat it into a circle, then use another sheet of parchment on top (and possibly a rolling pin) to spread the circle to about 1/4 inch thick. (Take off the top sheet of parchment before baking.) Bake it for 25 minutes, or until lightly browned with crispy edges. Remove it to add your toppings of choice. Then bake it for an additional 8 minutes.
